Timmy's Fusion was established in 2024 by Wing. Following a successful career in Finance, Wing chose to follow her culinary passion and earned a Diploma from Leith’s School of Food and Wine in 2023. Since that time, she has gained valuable work experience in fine dining and Michelin-starred establishments, including the Fat Duck - Heston Blumenthal’s renowned 3 Michelin-star restaurant , Dinner by Heston, KOL, Elystan Street, and most recently 64 Goodge Street, a French fine dining restaurant in Fitzrovia, London.

 

Wing was born in London to parents who emigrated from Hong Kong, and she cultivated her early interest in food whilst working in her family's Fish & Chip shop. The name Timmy’s Fusion pays tribute to her father, who passed away from a stroke in 2017 and has been a significant source of inspiration throughout her culinary journey. Wing's distinctive approach to flavours is influenced by her travels in Asia, which she artfully blends with contemporary British and French cooking techniques.
